I work for my step father as a plumber but work under the table.. The credit union that I go through told me that I need a pay stub showing that I make xxxx amount.. So, my question is what would be the best way to make a pay-stub to show them..

No lecture on paying taxes from me, but there are negatives associated with working off the books. You just discovered one. There are others, such as no workman's comp, disability or unemployment insurance and you may not be able to use the job as work history when looking for employment.
Just to reiterate:
Fake pay stub for loan = loan fraud.
Not paying taxes = tax fraud.
Dad paying you off the books = tax fraud
I'd get the potential felonies addressed before I went out and got a loan to by a toy.

I think a lot of guys here have done some part time work for cash, but it does make for a difficult long-term stable way to live.
People make their own luck. Faking a paystub to get a bank loan for an unnecessary purchase because you get paid only in cash just has that 'going to come back at some point and bite me on the ass' ring to it for me.
But good luck getting a bike.
when lenders ask for paystubs, they mean proof of wages (and the word 'reportable' is implied). Since the government audits all loans, then it has to jive with their records. Gov't makes the rules, we only follow them.
don't forget, loans means ALL loans. College loans, mortgages, credit cards (thought they're much more lenient), car loans, tractor loans, small business loans - dude!! You're screwed without a work history if you're going to get far in life and have nice playtoys.

here's another reason to look for the union label when hiring tradesmen.
When you make a major purchase in cash (or large deposits), don't you have to fill out federal paperwork to declare the source of the funds?
over 10 Gs in cash.
he can pay <$10,000 in cash and rest with check and it won't raise a red flag.

Very difficult to not get political with this thread. Why is he being paid off the books and why do so many employers run this risk? the employer saves also. From their side:
there's matching medical insurance payments that they don't have to pay now.
unemployment insurance
matching social security (runs like 8 or 9 % of the employee's salary :o)
workmans comp
also lessens the chances of getting sued for wrongful termination and such.

craft unions are notorious for adhering to the codes and keeping people out of the profession. That doesn't mean union guys don't do side jobs, but that there's no way you'd find a union crew hiring under the table if they want to keep their union cards.

My best friends parents pay something like that. Most down to earth people in the world. His father was a normal working man with about 1000 acres of inherited property in south Texas. Shell oil has been drilling for natural gas on that piece of property for about 15 years without much luck until about 5 years ago when they brought in a new geologist and he told them they were drilling on the wrong side of the property. He was right. They have something like 5 wells going now but its coming out of the ground faster than it can be processed. And still the nicest people you would ever meet.

Thanks Rack for sticking up for me in a sense.. Sure I was getting eaten alive at first but i just took it all with a grain of salt.. I have paid taxes my whole life, I worked with jacob(mother) for over 4 years at the firestation and this is the first time in my life where I havent paid taxes..
I moved out here(NM) 3 weeks ago and planned on giving up my bike for a year.. I got out here and got invited to a Duc Christmas party met a girl "Ducmouse" and its all down hill from there..
I have never been in a situation like this, it just sucks being stuck.. Anyways.. thats enough for me now.. Thanks for all your comments and bashings..
I think i will just go back to my SV650 its cheaper and I would have one by spring...
