Usually I prefer Pancetta of Proscuitto to bacon...but sometimes bacon is what is needed.

Huh...I could have sworn you mentioned that a long time ago (DML). He uses lump charcoal, blows off the ashes when the coals are ready, then places the meat directly onto the coals (using flank steak)...super hot, nice sear, zero flair-ups due to the lack of oxygen so no burnt meat. I've never tried it, but I have yet to try one of his ideas that wasn't awesome.
Anyway...any char on BBQ'ed meat is also a known carcinogen.

Pancetta is bacon, and there are many different styles besides the common rolled one. The big difference between pancetta and the varieties most Americans are familiar with is pancetta is not smoked, it is salt cured. I guess this means it would be OK for Cyrus to enjoy a pancetta and egg sandwich on a buttered roll while enjoying his morning cigarette ;D
