Title: Cake

Today is my birthday and for reasons I'm certain you all understand, I am posting a picture of my cake.

I asked my mother in law to make me a carrot cake, which she did (from scratch)

It's awesome!

The other piece of cake in the picture is one I made last weekend.  From a box 8)

It, too, is awesome!!

I figured since today is my day, there's no reason I should stick to a dessert plate tonight.

So a dinner plate it is :D

B says I make a mean carrot cake.  It just take too much time for me to make very often. 


My fav cake is a lemon cocoanut cake made by a local bakery.

I love Carrot cake. Tony Levin had a great recipe in his book, "Beyond the Bass Clef" that I love.

I also make a chocolate cake that I let cool, them poke holes in the top with a wooden spoon handle.
Drizzle a can of sweetened condensed milk on top then a layer of Cool-Whip.
Top with some crumbled Heath bar.

Had a chunk of cheesecake recently that was awesome.

The "crust" was chocolate chip cookie, thick layer of real cheesecakey goodness, more chocolate chip cookie as a top layer.  [thumbsup]

Happy B-Day, Monsterlover.

Cake is one of my favorite food groups and I love to bake.

Some of my favorites in no particular order: German chocolate, redneck strawberry cake (toothache city - made with frozen berries, jello, cake mix - all the horrible redneck ingredients), buttermilk spice cake (penuche frosting and pecan praline between the layers), Japanese spice cake, and hummingbird cake (if you like carrot cake, you'll love hummingbird cake).

Desmolu - you weren't kidding about your previous experience as a pastry chef.  Those are awesome cakes!

Redneck Strawberry Cake (could not be easier)
One white or yellow cake mix
One small box strawberry jello
1/2 c. water
3/4 c. oil
Mix all those ingredients together and once well mixed add
4 eggs
1/2 cup frozen strawberries (the ones in the paper can, macerated, with added sugar - you know the bad ones)
Beat until the berries are pulverized

Put in greased and floured pans and bake on 350 for 30 minutes (makes 3 9" layers)

Frosting
1 stick butter
1 box powdered sugar
1/2 t. salt
1/2 c. strawberries

Make as you would any buttercream.  Add strawberries gradually at the end until you get the consistency you are looking for.

This was the cake I wanted for my birthday every year.

Hummingbird Cake (no hummingbirds are harmed)
3 c. flour
2 c. sugar
1 t. baking soda
1 t. salt
1 t. cinnamon
3 eggs beaten
1 c. vegetable oil
1 1/2 t. vanilla
1 8oz. can of crushed pineapple (UNDRAINED - keep the juice)
1 c. chopped pecans
2 c. mashed bananas

Whisk to combine dries (first 5 ingredients) in a large bowl.  Add eggs and oil stirring only until dry ingredients are moistened.  DO NOT BEAT.  Stir in vanilla, pineapple (with juice), pecans, and nanners. It will be thick batter.  Spoon into 3 greased and floured 9" cake pans.  Bake at 350 for 25 to 30 minutes.  Cool in pans for 10 minutes, then remove from pans to cool completely.

Frost with cream cheese frosting and sprinkle with 1/2 c. chopped pecans on top.

2 8oz. pkgs cream cheese at room temp
1 pound powdered sugar (plus or minus depending on the weather, consistency you like, and how much sweet you like)

sorry, my secret invention ;-)

not much to it actually. I just sub malt (the real stuff, not the milk powder) for most of the sugar in the meringue base. It only works for real buttercream though, not the quick frosting that a lot of people think is buttercream. Although I've heard of people putting crushed malt balls into that and calling it malt buttercream.

Ooh, hummingbird cake is delicious!  Unless I am making for my dad, who has an addiction to cream cheese frosting, I usually make it as a bundt cake and then I poke holes in the top with a toothpick and drizzle a mixture of pineapple juice, confectioner's sugar, and sometimes I add a splash of Bailey's or amaretto to the drizzle.  Makes an awesome coffee cake.

I must say my favorite is Giant Eagle birthday cake with the buttercream icing.  You know what I mean if you're from western PA.

Just wanted to update the cake thread.

My wife finally made a guineas cake.

Omg so good.

We didn't have the stuff for the cream cheese frosting. Instead she just sprinkled some powdered cocoa on top. Well do it right next time. I think the cc frosting would have been better.

CHOCOLATE GUINNESS CAKE
Time: 1 hour 15 minutes

For the cake:
Butter for pan
1 cup Guinness stout
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
3/4 cup unsweetened cocoa
2 cups superfine sugar
3/4 cup sour cream
2 large eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
2 1/2 teaspoons baking soda

For the topping:
1 1/4 cups confectioners' sugar
8 ounces cream cheese at room temperature
1/2 cup heavy cream.

1. For the cake: heat oven to 350 degrees. Butter a 9-inch springform pan and line with parchment paper. In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.
2. In a small bowl, combine sour cream, eggs and vanilla; mix well. Add to Guinness mixture. Add flour and baking soda, and whisk again until smooth. Pour into buttered pan, and bake until risen and firm, 45 minutes to one hour. Place pan on a wire rack and cool completely in pan.
3. For the topping: Using a food processor or by hand, mix confectioners' sugar to break up lumps. Add cream cheese and blend until smooth. Add heavy cream, and mix until smooth and spreadable.
4. Remove cake from pan and place on a platter or cake stand. Ice top of cake only, so that it resembles a frothy pint of Guinness.

Yield: One 9-inch cake (12 servings).

I love a good Carrot Cake, followed closely by Red Velvet Cake

someday I will find the ultimate Butterscotch Cake or its recipe

when my daughter was much younger every now and then we would hit the local French Bakery...buy a cheesecake with a pair of plastic forks to go

and drive around talking/bonding/getting caught up while devouring it

we would find a public trash receptacle and throw the evidence away

like a pair of rummies getting rid of their empties

head back home and pass out from the sugar overload

when I head down to NC to visit

she still insists I bring one with me from that bakery

No one mentioned Tiramisu!!!  Especially when served in Italy with a hot cup of Espresso!

My wife makes kick-ass Tiramisu (recipe from our Italian neighbor) whenever she can find the fresh mascarpone.
