Had a chunk of cheesecake recently that was awesome.

The "crust" was chocolate chip cookie, thick layer of real cheesecakey goodness, more chocolate chip cookie as a top layer.  [thumbsup]

Happy B-Day, Monsterlover.

Cake is one of my favorite food groups and I love to bake.

Some of my favorites in no particular order: German chocolate, redneck strawberry cake (toothache city - made with frozen berries, jello, cake mix - all the horrible redneck ingredients), buttermilk spice cake (penuche frosting and pecan praline between the layers), Japanese spice cake, and hummingbird cake (if you like carrot cake, you'll love hummingbird cake).

Desmolu - you weren't kidding about your previous experience as a pastry chef.  Those are awesome cakes!

Redneck Strawberry Cake (could not be easier)
One white or yellow cake mix
One small box strawberry jello
1/2 c. water
3/4 c. oil
Mix all those ingredients together and once well mixed add
4 eggs
1/2 cup frozen strawberries (the ones in the paper can, macerated, with added sugar - you know the bad ones)
Beat until the berries are pulverized

Put in greased and floured pans and bake on 350 for 30 minutes (makes 3 9" layers)

Frosting
1 stick butter
1 box powdered sugar
1/2 t. salt
1/2 c. strawberries

Make as you would any buttercream.  Add strawberries gradually at the end until you get the consistency you are looking for.

This was the cake I wanted for my birthday every year.

Hummingbird Cake (no hummingbirds are harmed)
3 c. flour
2 c. sugar
1 t. baking soda
1 t. salt
1 t. cinnamon
3 eggs beaten
1 c. vegetable oil
1 1/2 t. vanilla
1 8oz. can of crushed pineapple (UNDRAINED - keep the juice)
1 c. chopped pecans
2 c. mashed bananas

Whisk to combine dries (first 5 ingredients) in a large bowl.  Add eggs and oil stirring only until dry ingredients are moistened.  DO NOT BEAT.  Stir in vanilla, pineapple (with juice), pecans, and nanners. It will be thick batter.  Spoon into 3 greased and floured 9" cake pans.  Bake at 350 for 25 to 30 minutes.  Cool in pans for 10 minutes, then remove from pans to cool completely.

Frost with cream cheese frosting and sprinkle with 1/2 c. chopped pecans on top.

Cream cheese frosting:
1/2 c. butter
2 8oz. pkgs cream cheese at room temp
1 pound powdered sugar (plus or minus depending on the weather, consistency you like, and how much sweet you like)
2 t. vanilla
