sorry, my secret invention ;-)

not much to it actually. I just sub malt (the real stuff, not the milk powder) for most of the sugar in the meringue base. It only works for real buttercream though, not the quick frosting that a lot of people think is buttercream. Although I've heard of people putting crushed malt balls into that and calling it malt buttercream.

Ooh, hummingbird cake is delicious!  Unless I am making for my dad, who has an addiction to cream cheese frosting, I usually make it as a bundt cake and then I poke holes in the top with a toothpick and drizzle a mixture of pineapple juice, confectioner's sugar, and sometimes I add a splash of Bailey's or amaretto to the drizzle.  Makes an awesome coffee cake.

Happy belated man!  I had a birthday 7 days before you.

I must say my favorite is Giant Eagle birthday cake with the buttercream icing.  You know what I mean if you're from western PA.

Hummingbird Cake (no hummingbirds are harmed)
3 c. flour
2 c. sugar
1 t. baking soda
1 t. salt
1 t. cinnamon
3 eggs beaten
1 c. vegetable oil
1 1/2 t. vanilla
1 8oz. can of crushed pineapple (UNDRAINED - keep the juice)
1 c. chopped pecans
2 c. mashed bananas

Whisk to combine dries (first 5 ingredients) in a large bowl.  Add eggs and oil stirring only until dry ingredients are moistened.  DO NOT BEAT.  Stir in vanilla, pineapple (with juice), pecans, and nanners. It will be thick batter.  Spoon into 3 greased and floured 9" cake pans.  Bake at 350 for 25 to 30 minutes.  Cool in pans for 10 minutes, then remove from pans to cool completely.

Frost with cream cheese frosting and sprinkle with 1/2 c. chopped pecans on top.

Cream cheese frosting:
1/2 c. butter
2 8oz. pkgs cream cheese at room temp
1 pound powdered sugar (plus or minus depending on the weather, consistency you like, and how much sweet you like)
2 t. vanilla
