I think I could benefit from a track day or two, but there's none nearby AND I'm not sure I wanna put Molly on the track ~

B and I have already checked out the track situation down there, in forethought of our possible relocation.  IIRC, you are within 5 hours of at least 3 tracks, not close, but not too far either.

You should do California Superbike School, use their bikes, so Molly can stay home, safe.

Road Atlanta is 2.5 hours

Road Atlanta wouldn't be bad.  I'll look into the group you mentioned.  I'm sure it's a good bit more, but it'd be worth it IMO to keep Molly safe & sound.  Plus, I won't have to drive my truck if I do a school that provides bikes.  I'd probably save the difference in the less fuel my ol' Taurus used ~
