Grandma used to make smelts, buttermilk salad and red potatos.  Always was one of my favorites - I think because it was Grandpa's favorite.

not the ones I've had.  Mild like perch.

I just dip them in milk and then coat in flour with some salt and pepper in it.  Toss in a hot cast iron pan with a thin layer of canola oil on the bottom.  Brown a few minutes on each side.  They'll fall apart when cooked through.  

Cool a bit and nommm.....

Bones?  Or do they cook away?  3.5 year old monkeys compatible or tricky to eat?  If so, smelts will be for dinner soon!

bones are too fine for most to notice. 

For the monkey I would try to remove the larger vertibrae. 

Easily accomplished b/c they almost self fillet off the back bone when cooked throughly.

Now I may just have to buy some for dinner soon, too!

We had fish sticks!  Trident fish sticks.  I taught their safety manager CPR.  He sent me a box of fish products!
