I've done most of the work on the house so far, with help of course.

I need to get it done at this point and doing the drywall myself will really set things back.

Not really.

All the local guys do the finish.

I got a quote for hanging, finishing, priming everything, and painting closets and ceilings. The vaulted ceilings are going to be wood.

That quote was $900 less than the quote I got yesterday which was just drywall and finish.
