We take thick slices of sugar or salt cured ham, then heat up a frying pan and toss it in.  The ham is cut to a thickness  that you can get a good sear on both sides and it be cooked through at the same time.  It's not as salty as bacon, but much more substantial as a side or even a meal.  It's usually served as a breakfast side, stuffed in a biscuit or in a steak sized portion for lunch or supper.  We just call it 'Country Ham."

Probably about 5-8mm or so. 

An alternative version of it is to take a precooked (we call them spiral sliced) ham and toss them in the frying pan just long enough to get good and hot.

The salt curing of the ham comes from the the pioneer days before refrigeration and freezing foods was available salt curing was the only way to keep meat for the winter.  So, for us here in the mountains, this is a heritage type preparation and meal.  Even now, salt cured ham that you get at the grocery store has no need to be refrigerated at all.

..in those days they would had what what was known here as "meat safes"... a cupboard with perforated tin panels to allow cool air flow...
