never drove a racing cart, do they really oversteer and spin that quickly and unpredictably if you jump on the throttle in anything tighter than a mild corner?

I was just racing carts on my GT5 game and boy they go from straight to spinning like a top

depends on how you set up the chassis .... yeap, you can set it up to understeer if you want ... depends on manufacturer ...
