Snagged a recipe for what sounds like an excellent Mojito on History Channel's Modern Marvels - Distilleries .  I'll be trying some of those tonight.

They are certainly nice and crisp.  I've just gotta get home and get a little simple syrup made.  I'll post results & recipe what I figure out if it's any good or not ~

I've never done beer.  I've made two batches of wine.  One batch was dandelion, the other was strawberry.  The dandelion was by far the better.  I'm looking to make some mead next, got a simple looking recipe and I'll try that.  Unless others have recipes to share.

Update on this weekend's Mojitos!

Not bad, could be better, but they sure went down easy.

First:  Make some mint-infused simple syrup.
1.  Get a pot that'll hold a couple cups of water
2.  Gather some fresh mint leaves (a good couple handfuls or so)
3.  Put in 2 cups of water, tear mint leaves & add to water
4.  Heat water to a simmer, add 2 cups of sugar
5.  Stir until sugar disolves.
6.  Cover and let simmer for about 5 minutes to really get the mint in the syrup.
7.  Pour into a hot-safe container, filtering out mint leaves and allow to cool (something with a lid so you can refrigerate it)

Second:
1.  Find more mint leaves, a taller class (about twice the volume of a rocks glass), a stirring tool
2.  Put 4-5 large mint leaves in, tearing them in half, then pour 1-2 ounces of the mint syrup in (adjust to taste)
3.  Take stirrer and gently press mint leaves to break open some veins
4.  Add a couple ounces of light/silver rum (Cap't Morgan is my fav, adjust brand & amount to preference) then add a few ice cubes
5.  Top with club soda, stir.

Third:
1.  Drink

The syrup keeps in the fridge for a while.  It's just a sugar syrup.
