but like I said, I'm kinda thinking something lighter, fresh.

and as much as I heart dark greens, I want something bright, with pop. if that makes sense...

Not much mang... should be in bed, but not tired.  Have to be up in 6 hrs.

Melt butter in oven proof pan, and chopped shallot, then rice. Stir to brown then add chicken stock or water, bay leaf or 2, + salt and pepper. Bake on 350 for 20 minutes or so.  Take out and stir in some chopped herbs.  Serve!
