In person, when your shooting the same drills it's even more impressive. I'll never shoot that smooth.

You'd really have to read up on them. It has a lot to do with fit and finish. My STI is really really nice, but it's night and day between them. That is, these two particular models. There are plenty of STI guns that are as expensive as the Wilson that Frank is running. (he has a few of them as well)

Why wouldn't a M&P with a 17 round mag at a fraction of the cost do the job?

It'll do 'a' job, but if you're competing you have to have the best available equipment. On that note Frank would out shoot us all if he was running his M&P and we were running his Wilson.
